Cocoa Cottage Cheesecake

Ingredients

- 10 vanilla wafer cookies
- 1 tablespoon cocoa powder
- 1 tablespoon butter, melted
- 1 3/4 cups cottage cheese
- 1/3 cup cocoa powder
- 1/2 cup sugar
- 1 (1 ounce) envelope unflavored gelatin
- 1/2 cup milk
- 1 teaspoon vanilla extract
Recipe
- 1 heat oven to 350°f.
- 2 stir together finely crushed vanilla wafer cookies, 1 tbsp cocoa powder and 1 tbsp melted butter.
- 3 press onto bottom of 8-inch springform pan.
- 4 bake 5 minutes or until set. cool completely on wire rack.
- 5 place cottage cheese in a food processor or blender; process until smooth.
- 6 stir together cocoa, sugar and gelatin in saucepan; stir in 1/2 cup milk.
- 7 let stand 5 minutes to soften gelatin. cook over medium heat, stirring constantly, until gelatin is completely dissolved; remove from heat.
- 8 add gelatin mixture and vanilla to cottage cheese in food processor; blend well.
- 9 pour onto crust and refrigerate for 4 hours.
