Coconut Oat Cookies (egg Free)

Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder (or baking soda)
- 1 cup desiccated coconut
- 1 cup rolled oats (old-fashioned)
- 1/2 cup butter, chopped
- 2/3 cup caster sugar (i used vanilla sugar)
- 1 tablespoon golden syrup
Recipe
- 1 preheat the oven to 180 degrees celsius grease two baking trays with butter.
- 2 sift the flour and baking powder (or baking soda) into a medium sized bowl. stir in the coconut and oats.
- 3 melt the butter, sugar and golden syrup together over medium heat. stir into the dry ingredients.
- 4 using a wooden spoon, mix the ingredients together until well-blended.
- 5 roll into 1/2 tbsp sized balls and place 1 cm away from each other on the baking tray. flatten slightly with a fork.
- 6 bake for 10 minutes, or until golden brown. leave to cool for about 5 minutes before transferring onto a wire rack to cool completely.
