Coconut Oat Cookies (egg Free)

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder (or baking soda)
  • 1 cup desiccated coconut
  • 1 cup rolled oats (old-fashioned)
  • 1/2 cup butter, chopped
  • 2/3 cup caster sugar (i used vanilla sugar)
  • 1 tablespoon golden syrup

Recipe

  • 1 preheat the oven to 180 degrees celsius grease two baking trays with butter.
  • 2 sift the flour and baking powder (or baking soda) into a medium sized bowl. stir in the coconut and oats.
  • 3 melt the butter, sugar and golden syrup together over medium heat. stir into the dry ingredients.
  • 4 using a wooden spoon, mix the ingredients together until well-blended.
  • 5 roll into 1/2 tbsp sized balls and place 1 cm away from each other on the baking tray. flatten slightly with a fork.
  • 6 bake for 10 minutes, or until golden brown. leave to cool for about 5 minutes before transferring onto a wire rack to cool completely.
