Cream Cheese Rhubarb Bars

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • 3/4 cup butter, softened
  • 2 cups flour
  • 3/4 cup quick oats
  • 3/4 cup brown sugar
  • 12 ounces cream cheese (1 1/2 packages)
  • 1 1/4 cups sugar
  • 2 large eggs, room temperature
  • 1/2 teaspoon cinnamon (or more to taste!)
  • 1/4 teaspoon nutmeg
  • 3 cups rhubarb, chopped

Recipe

  • 1 preheat oven to 350°f.
  • 2 combine butter, flour, oats and brown sugar until crumbly.
  • 3 press 1/2 the mixture into bottom of 9x13 baking pan.
  • 4 beat cream cheese, sugar, eggs, cinnamon and nutmeg in a large mixing bowl. stir in rhubarb.
  • 5 pour over prepared crust.
  • 6 sprinkle with remaining reserved topping.
  • 7 bake for 40-45 minutes. cool and refrigerate.
  • 8 serve cool.
