Cream Cheese Rhubarb Bars

Ingredients
- 3/4 cup butter, softened
- 2 cups flour
- 3/4 cup quick oats
- 3/4 cup brown sugar
- 12 ounces cream cheese (1 1/2 packages)
- 1 1/4 cups sugar
- 2 large eggs, room temperature
- 1/2 teaspoon cinnamon (or more to taste!)
- 1/4 teaspoon nutmeg
- 3 cups rhubarb, chopped
Recipe
- 1 preheat oven to 350°f.
- 2 combine butter, flour, oats and brown sugar until crumbly.
- 3 press 1/2 the mixture into bottom of 9x13 baking pan.
- 4 beat cream cheese, sugar, eggs, cinnamon and nutmeg in a large mixing bowl. stir in rhubarb.
- 5 pour over prepared crust.
- 6 sprinkle with remaining reserved topping.
- 7 bake for 40-45 minutes. cool and refrigerate.
- 8 serve cool.
