Date Bars - Mescoula

Ingredients

  • Servings: 9
  • 2 eggs, well beaten
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup melted butter or 1/2 cup margarine
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 cup pitted dates, chopped (cut with wet scissors)
  • 1 cup finely chopped walnuts or 1 cup almonds
  • 1/3 cup seedless raisin
  • confectioners' sugar, for garnish

Recipe

  • 1 preheat oven to 350.
  • 2 in large mixing bowl, mix eggs, sugar, vanilla, and melted butter or margarine with egg beater or electric mixer until well blended, about 3 minutes. mixing constantly, add flour, a little at a time, and baking powder.
  • 3 using rubber spatula, fold in dates, nuts, and raisins, and mix well. pour mixture into greased 9-inch square cake pan.
  • 4 bake in oven for about 30 minutes, or until a toothpick inserted in the center comes out clean. while still warm, cut into bars about an inch wide and 3 inches long.
  • 5 put 3 tablespoons confectioners' sugar into a small dish. roll each bar in confectioners' sugar.
