Date Bars - Mescoula

Ingredients

- 2 eggs, well beaten
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1/2 cup melted butter or 1/2 cup margarine
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 cup pitted dates, chopped (cut with wet scissors)
- 1 cup finely chopped walnuts or 1 cup almonds
- 1/3 cup seedless raisin
- confectioners' sugar, for garnish
Recipe
- 1 preheat oven to 350.
- 2 in large mixing bowl, mix eggs, sugar, vanilla, and melted butter or margarine with egg beater or electric mixer until well blended, about 3 minutes. mixing constantly, add flour, a little at a time, and baking powder.
- 3 using rubber spatula, fold in dates, nuts, and raisins, and mix well. pour mixture into greased 9-inch square cake pan.
- 4 bake in oven for about 30 minutes, or until a toothpick inserted in the center comes out clean. while still warm, cut into bars about an inch wide and 3 inches long.
- 5 put 3 tablespoons confectioners' sugar into a small dish. roll each bar in confectioners' sugar.
- 6 store bars in box, with wax paper between layers. serve as a sweet snack.
