Chocolate-glazed Cranberry Blondies

Ingredients

- 2/3 cup flour
- 1/2 teaspoon baking powder
- 1 egg
- 1 cup brown sugar, packed
- 3 1/2 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1/3 cup dried cranberries
- 2 tablespoons walnuts, finely chopped
- 1/3 cup confectioners' sugar
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon hot water

Recipe
- 1 heat oven to 350°f.
- 2 coat an 8 inch square pan with cooking spray, and line the bottom and two sides with foil, letting the ends of the foil extend over the sides of the pan.
- 3 spray the foil with cooking spray. sift together flour and baking powder and set aside.
- 4 beat together egg, brown sugar, butter and vanilla.
- 5 gradually beat in flour mixture just until blended.
- 6 mix in cranberries and walnuts. spread batter in pan.
- 7 bake for 20 minutes or until a toothpick inserted in the center comes out clean.
- 8 cool in pan on a wire rack.
- 9 make the glaze by whisking together the confectioners' sugar, cocoa and water until smooth.
- 10 drizzle over blondies.
- 11 when the glaze is set, remove from the pan using the foil handles and cut.
