Chocolate-glazed Cranberry Blondies

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 16
  • 2/3 cup flour
  • 1/2 teaspoon baking powder
  • 1 egg
  • 1 cup brown sugar, packed
  • 3 1/2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 1/3 cup dried cranberries
  • 2 tablespoons walnuts, finely chopped
  • 1/3 cup confectioners' sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon hot water
  • cooking spray

Recipe

  • 1 heat oven to 350°f.
  • 2 coat an 8 inch square pan with cooking spray, and line the bottom and two sides with foil, letting the ends of the foil extend over the sides of the pan.
  • 3 spray the foil with cooking spray. sift together flour and baking powder and set aside.
  • 4 beat together egg, brown sugar, butter and vanilla.
  • 5 gradually beat in flour mixture just until blended.
  • 6 mix in cranberries and walnuts. spread batter in pan.
  • 7 bake for 20 minutes or until a toothpick inserted in the center comes out clean.
  • 8 cool in pan on a wire rack.
  • 9 make the glaze by whisking together the confectioners' sugar, cocoa and water until smooth.
  • 10 drizzle over blondies.
  • 11 when the glaze is set, remove from the pan using the foil handles and cut.
