Breakfast Loaf

Ingredients
- Servings: 8
- 1 loaf round bread, 8 inches in diameter
- 4 slices bacon
- 1/2 red bell pepper, thinly sliced
- 6 eggs, scrambled
- 2 tablespoons grated parmesan cheese
- 2 ounces sliced black olives
- 1 medium tomato, thinly sliced
- 1/2 cup shredded cheddar cheese
- 4 ounces mushrooms, sliced and cooked
Recipe
- 1 preheat oven to 350 degrees.
- 2 slice the top off of the bread loaf; set aside for lid.
- 3 remove interior of the loaf, leaving 1" on all sides and bottom.
- 4 layer the following inside the loaf: bacon, red pepper, eggs, sprinkled with parmesan cheese, black olives, tomato, cheese, and mushrooms.
- 5 replace the lid and wrap the entire loaf in aluminum foil.
- 6 place on a cookie sheet.
- 7 bake about 30 minutes or until heated throughout.
- 8 cut into 8 wedges.
