Almond Chickpea Flour Cookies

Ingredients
- 1 cup almonds, finely ground
- 1 cup chickpea flour
- 3/4 cup brown sugar
- 1 egg yolk
- 1/4 lb butter
- 1 teaspoon cardamom (optional)
Recipe
- 1 preheat oven to 300°f.
- 2 cream together softened butter and sugar.
- 3 add egg yolk, mix until smooth and creamy.
- 4 add flour and finely ground almonds (almond meal), knead until soft dough forms.
- 5 roll balls a little smaller than walnuts but bigger than hazelnuts, place on cookie sheet and flatten.
- 6 bake at 300° 12-18 minutes (my oven did it in 15 minutes, but my friend's needed 20, so watch carefully the first time you make these!).
- 7 let cool on a wire rack.
