Candied Lemon Slices Dipped In Chocolate

Ingredients
- 4 meyer lemons
- 2 cups water
- 3 1/2 cups granulated sugar
- 3 cups granulated sugar, as needed for coating
- 2 lbs chocolate, chopped into small pieces
Recipe
- 1 in a heavy saucepan, combine water and sugar. place over medium high stove until sugar dissolves. cut lemons in half length wise, then slice into 1/4" thick slices. add lemons to sugar syrup and bring to boil. lower heat and continue to simmer for 1 hour, dunking the floaters occasionally. remove from heat and remove slices from syrup using a slotted spoon. place slices in single layer on wire rack over a cookie sheet lined with waxed paper or parchment. allow to dry. you can speed up the drying process by placing them in a slow oven (170 degrees) with the door propped slightly open or warm the oven, turn it off and leave them overnight. when dry, place them in a ziploc bag with remaining sugar and shake to coat. melt chocolate over a double boiler and dip the slices, returning them to the wire rack to solidify.
