Chocolate Meringue Christmas Cookies -- A Recipe From The Early

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 3 egg whites
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1/2 cup ground blanched almond
  • 1/2 teaspoon vanilla
  • 1 cup semisweet chocolate piece

Recipe

  • 1 preheat oven to 350.
  • 2 melt chocolate in a pan or bowl set over hot water on the stove.
  • 3 let cool.
  • 4 beat egg and salt until stiff, but not dry.
  • 5 gradually beat in sugar until the mixture is very stiff and satiny.
  • 6 fold in the almonds, vanilla and melted chocolate.
  • 7 drop by teaspoonfuls onto greased cookie sheets.
  • 8 bake for 15 minutes.
  • 9 it's best to take these off with a spatula while still warm].
  • 10 if you want to cheat, these can also be baked on brown paper or parchment paper.
