Chocolate Mint Meltaways

Ingredients

  • Servings: 12
  • 1 1/2 cups mint chocolate chips
  • 1 large egg yolk
  • 3/4 cup butter, softened
  • 1 1/4 cups flour, unbleached
  • 1/2 cup confectioners' sugar, sifted
  • 1/2 cup mint chocolate chips (use 1 10-oz bag of nestles mint-chocolate chips and divide into 1 cup and 1/2 cup.)
  • 2 tablespoons almonds, toasted, chopped
  • 1 1/2 tablespoons vegetable shortening

Recipe

  • 1 cookies:
  • 2 preheat oven to 350 degrees f.
  • 3 melt over hot (not boiling) water, 1 cup of mint chocolate chips; stir until smooth.
  • 4 set aside.
  • 5 in a large bowl, combine butter, confectioners' sugar, and egg yolk.
  • 6 beat until creamy.
  • 7 add melted chips and flour; beat until well blended.
  • 8 drop by heaping teaspoonfuls onto ungreased cookie sheets.
  • 9 bake at 350 degrees f. for 8 to 10 minutes.
  • 10 allow to stand for 3 minutes before removing from cookie sheets.
  • 11 cool completely on wire racks.
  • 12 glaze:
  • 13 combine over hot (not boiling) water the remaining 1/2 cup of mint-chocolate chips and vegetable shortening.
  • 14 stir until chips are melted and mixture is smooth.
  • 15 drizzle each cookie with 1/2 t of the glaze; sprinkle with almonds.
  • 16 chill until set.
  • 17 stor in airtight container in the refrigerator.
