Chocolate Peppermint Drops

Total Time: 21 mins Preparation Time: 10 mins Cook Time: 11 mins

Ingredients

  • 1 cup margarine, softened
  • 2/3 cup sugar
  • 2/3 cup dark brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 2 eggs, beaten
  • 2 cups all-purpose flour
  • 3/4 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup candy cane, crushed

Recipe

  • 1 combine margarine, sugars, extracts and eggs in a large bowl; mix well.
  • 2 add remaining ingredients except candy canes; blend well.
  • 3 chill for 15 minutes, or until dough is easy to handle.
  • 4 roll well-rounded teaspoons of dough into balls; place on parchment paper-lined baking sheets.
  • 5 bake at 325 degrees for 11 to 13 minutes, or until cookies are puffed and centers are set.
  • 6 remove from oven; with back of a spoon, immediately and gently make a well in center of cookies. spoon about 1/2 teaspoon of crushed candy into well.
  • 7 let stand for 2 to 3 minutes before removing from baking sheet.
