Chocolate Silk Pie

Ingredients
- 1 1/2 cups crumbled fat free sugar-free devil's food cookies
- 3 tablespoons soy margarine, melted
- 2 cups soft silken tofu
- 3/4 cup sugar or 3/4 cup natural artificial sweetener
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
Recipe
- 1 put cookie crumbs in the bottom of a lightly oiled 9" pie pan.
- 2 add melted soy margarine, and toss with a fork to blend.
- 3 press crumb mixture to the bottom and up the sides of the pie pan.
- 4 bake for 5 minutes to set.
- 5 remove from oven and let cool.
- 6 in a blender, combine remaining ingredients and process until smooth.
- 7 pour filling mixture into the crust.
- 8 refrigerate for 2 hours before serving.
