Cocoa Meringues

Ingredients
- 2 egg whites
- 1/2 teaspoon vanilla
- 1/8 teaspoon cream of tartar
- 2/3 cup sugar
- 2 tablespoons unsweetened cocoa powder
- 2/3 cup miniature semisweet chocolate chips
- 2 ounces semisweet chocolate, melted (optional)
Recipe
- 1 preheat oven to 300°f.
- 2 beat egg whites, vanilla and cream of tartar on high speed using an electric mixer, until soft peaks form.
- 3 combine sugar and cocoa.
- 4 gradually add sugar mixture, one tablespoon at a time, continuing to beat until stiff peaks form.
- 5 gently fold in chocolate chips.
- 6 drop by spoonfuls onto lightly greased cookie sheet.
- 7 bake for 20 minutes, or until meringues are firm and they are very lightly browned underneath.
- 8 allow to cool on wire rack.
- 9 drizzle melted chocolate (if using) over cookies.
