Cocoa Meringues

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 2 egg whites
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon cream of tartar
  • 2/3 cup sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2/3 cup miniature semisweet chocolate chips
  • 2 ounces semisweet chocolate, melted (optional)

Recipe

  • 1 preheat oven to 300°f.
  • 2 beat egg whites, vanilla and cream of tartar on high speed using an electric mixer, until soft peaks form.
  • 3 combine sugar and cocoa.
  • 4 gradually add sugar mixture, one tablespoon at a time, continuing to beat until stiff peaks form.
  • 5 gently fold in chocolate chips.
  • 6 drop by spoonfuls onto lightly greased cookie sheet.
  • 7 bake for 20 minutes, or until meringues are firm and they are very lightly browned underneath.
  • 8 allow to cool on wire rack.
  • 9 drizzle melted chocolate (if using) over cookies.
