Cranberry Coconut Cookies

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 cup whole wheat flour ( works too)
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 cup margarine or 1/2 cup butter
  • 1/2 cup sugar
  • 1/3 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup shredded coconut
  • 1/2 cup walnuts or 1/2 cup pecans
  • 1 1/2 cups cranberries, chopped (fresh or frozen)

Recipe

  • 1 combine flour, baking powder and cinnamon, set aside.
  • 2 cream butter and sugars until light and fluffy.
  • 3 beat in egg and vanilla.
  • 4 gradually beat in flour mixture.
  • 5 stir in coconut, nuts and cranberries.
  • 6 drop by the tablespoonful 2 inches apart on a greased sheet.
  • 7 bake at 350 for 12-15 minutes until golden.
  • 8 cool 5 minutes before removing from cookie sheet.
