Cranberry Coconut Cookies

Ingredients
- 1 cup whole wheat flour ( works too)
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 cup margarine or 1/2 cup butter
- 1/2 cup sugar
- 1/3 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla
- 1 cup shredded coconut
- 1/2 cup walnuts or 1/2 cup pecans
- 1 1/2 cups cranberries, chopped (fresh or frozen)
Recipe
- 1 combine flour, baking powder and cinnamon, set aside.
- 2 cream butter and sugars until light and fluffy.
- 3 beat in egg and vanilla.
- 4 gradually beat in flour mixture.
- 5 stir in coconut, nuts and cranberries.
- 6 drop by the tablespoonful 2 inches apart on a greased sheet.
- 7 bake at 350 for 12-15 minutes until golden.
- 8 cool 5 minutes before removing from cookie sheet.
