Calendula Drop Cookies

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 6 calendula flowers
  • 1/2 cup butter, room temp
  • 1/2 cup sugar
  • 2 oranges, zest of, grated
  • 2 tablespoons orange juice concentrate, at room temp
  • 1 teaspoon vanilla
  • 2 eggs, lightly beaten
  • 2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup almond halve

Recipe

  • 1 preheat oven to 350°f.
  • 2 lightly grease 2 cookie sheets.
  • 3 rinse flowers and pull off petals, set aside.
  • 4 in a bowl, cream butter, sugar and orange rind till fluffy.
  • 5 add orange juice concentrate and vanilla.
  • 6 mix in eggs, stirring till blended.
  • 7 sift together flour, baking powder and salt.
  • 8 blend calendula petals and dry ingredients into creamed mixture.
  • 9 drop dough by teaspoonfuls onto cookie sheet.
  • 10 press an almond half on top of each.
  • 11 bake 12-15 minutes.
