Cherry Delight Cookies

Ingredients

• 1 cup sugar
• 3/4 cup butter or 3/4 cup margarine
• 1 egg
• 1 teaspoon vanilla
• 3 drops red food coloring (optional)
• 1 (4 ounce) bottle maraschino cherries, including juice
• 1 cup shredded coconut
• 1/2 cup chopped walnuts
• 1 cup chopped dates
• 1 teaspoon baking soda
• 1/4 teaspoon salt
• 2 cups flour

Recipe

• 1 mix baking soda, salt and flour together. set aside.
• 2 cream together sugar and butter.
• 3 beat in egg, vanilla and food coloring if using.
• 4 stir in maraschino cherries (including juice), coconut, nuts, and dates.
• 5 add dry ingredients.
• 6 drop onto greased cookie sheet about 2 inches apart.
• 7 bake at 350 degrees for 12 minutes.
• 8 enjoy.
• 9 note: depending on how much juice is in the cherries you may need to add additional flour otherwise the cookies will flatten way out when baked.
